Hot Pineapple Rum Ice Cream

A simple fast and
delicious dessert made with hot sliced pineapples topped with ice cream and a
sizzling rum sauce.
 

So I'm a little slow, but I am finally getting around to
sharing this dessert.  I can't claim it
as mine because I saw something very similar on a television show recently, but
in case you missed it, here it is.  I
love eating dessert, but am not so great at making it.  That's why this is a perfect dish because
it's incredibly fast and easy.  I made it
while a movie was on pause.  Pretty good,
don't you think?  The pineapple in the original
recipe was grilled, but I just did mine in a skillet and it worked out
fine.  Make sure to use really, really
good ice cream.  Indulge! 

Hot Pineapple Rum Ice
Cream


  • 2 pineapple slices per person (cored)

  • 1 tablespoon butter

  • 1/4 cup brown sugar

  • 1/2 cup rum

  • 1 big scoop good quality vanilla ice cream 

Put a tiny bit of butter in the bottom of a hot
skillet, then add the pineapple slices. 
Brown lightly, a few minutes on each side.  Put hot pineapple slices in individual
serving bowls.  Heat butter in skillet
and stir in brown sugar until dissolved, then add rum and blend well.  Put a scoop of ice cream over each pineapple
serving, then pour rum sauce over all and serve at once.  This sauce recipe makes enough for about 2
servings.  Plan on using a treadmill next
morning.

This dessert was outstanding! The brown sugar rum sauce was rich and smooth and mixed with the pineapple and ice cream...mmmm. A keeper for sure!
