Spring Salad
Sometimes a salad needs a
little inspiration. Actually, I'd eat
the same old one every night, but I always appreciate a fresh spin. There are lots of ways to spruce up your evening
salad, but if you're out of ideas, here's a good start. Please note the pineapple can be fresh or
canned. It's one of the few things
that's not bad out of a can.
Spring Salad Recipe
- 1 small head Boston lettuce,
torn in pieces - 1/2 red onion, chopped
- 1 handful radishes, sliced
- 1 cup pineapple chunks
- Sprinkling of blue cheese
Add everything to a bowl and toss. Top with my favorite basic salad dressing of
lemon, olive oil, salt and pepper. Mix
well and serve cold.
