Grilled Potatoes and Onions

Recipe for foil-wrapped packages of potatoes and onions in a flavorful sauce, cooked on the grill.

About halfway through the
summer, it's easy to take grilling for granted. "What's for dinner?" "Oh, I'll just grill something." Yawn. But right now when things are just heating up, at least where I am,
grilling seems like a miraculously modern yet caveman-like cooking
technique. Plus, all that sitting around
watching a man cook for you is quite a turn-on. This is an easy way to have potatoes with whatever else you're
grilling. Heavy duty foil is easier to
work with on the grill. Feel free to use
any type of potato and onion or change the seasonings. This one is basic but delicious.

Grilled Potatoes and Onions 

  • 1 potato per person
  • 1 small onion per person
  • Olive oil
  • Small spoonful of spicy
    mustard
  • Salt and pepper
  • Rosemary (or thyme or oregano
    or whatever you like)

Prepare grill. Slice potatoes and onions in about 1/4 inch
slices. Put slices in bowl and drizzle
with olive oil. Add mustard and season with
salt, pepper and rosemary. Toss
well. Pull out sheets of foil big enough
to hold potatoes. For just one or two,
you can do them all in one package. More
than that and you'll need separate foil packages. Distribute potatoes onto foil, fold over ends
and seal into a tightly-closed packet. Put packages on grill and cook for about 25 or 30 minutes.
