Chicken Meatloaf Recipe

I made a meatloaf tonight (my
former gourmet self would be horrified), but in an effort to healthy it up a
bit, I used ground chicken instead of beef. It was surprisingly good. I was
going to make a lot of healthy veggies on the side, but sometimes I can only do
so much. Tonight it was not a lot. I managed to shove my potato dish in the oven
and so it was truly a 1950's meat and potato dinner, only a bit healthier. I think next time I make it, I'll put on
pearls and pumps and stockings and see if anyone notices. Somehow, I think that outfit would make me
want to smoke, however, and there goes the healthy factor. Give my meatloaf a try, and if you feel
inspired to do anything weird, let me know. Please don't be gross.

Chicken Meatloaf Recipe

  • 2 slices bread, crusts
    removed
  • 1/2 cup milk
  • 2 eggs, beaten
  • 2 pounds ground chicken
  • 1 onion, chopped
  • 1 green pepper, chopped
  • Salt & pepper
  • Splash soy sauce
  • 1/2 cup tomato sauce
  • 1/4 cup grated cheese

Preheat oven to 350 degrees. Tear bread in pieces and put in bowl. Add milk and mix together. Stir in eggs, chicken, onion, green pepper,
salt & pepper and soy sauce. Mix until
blended. Shape mixture into a football
(my husband has a thing about this) and put into a 9 x 13 pan. Top with tomato sauce and grated cheese. Bake for one hour.
