Teriyaki Chicken Recipe

A fast, easy recipe for spicy baked chicken thighs.

We have one of those inversion tables here you've probably
seen on television where you strap your feet in and flip upside down. I think of my spine as a twisted telephone
cord (from the old days when they had cords) that straightens out when you hang
it upside down. Sadly, I used it the
other day in the midst of some sort of muscle problem, and my sore back turned
into an immobile one. Somehow, I managed
to get dinner on the table while shuffling around in slippers. I'm good. The result was this easy, tasty recipe. I most certainly did not eat it upside down. 

Teriyaki Chicken Recipe

  • 6 boneless chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons bottled teriyaki sauce
  • Salt & pepper
  • Mexican spice

Preheat oven to 350 degrees. Spread olive oil in bottom of a small baking dish and add chicken. Pour Teriyaki sauce over one side, then
sprinkle with salt, pepper and Mexican spice. Flip and repeat on remaining side. Bake 40 minutes.
