Easy Hummus Dip Recipe
Hummus seems to have taken
over the dip section of American grocery stores. I'm not complaining. It's a huge improvement over those tubs of
fake onion dip, and a lot healthier too. Hummus is really easy to make at home, though, and one of those things that's
worth doing yourself. If you make your
own, you can control the garlic content, which you might want to be strong or
non-existent depending on your evening plans. Plus, cans of chickpeas keep on the shelf forever, and prepared dips do
not. You'll be ready for company in a
jiffy, or just have a healthy snack on hand that is low in calories too. I don't make mine in a truly traditional
way. There's no Tahini in it, but that's
only because I don't always have that around. Plus, it has a fresher taste without it. Do it your own way if you must, but this is my version.
Easy Hummus Dip
- 1 large can chickpeas
- 1 tablespoon olive oil
- 1 clove garlic, peeled
- 1 handful parsley
- Salt and pepper
- Juice of 1 lemon
Rinse chickpeas well and
drain in colander. Put all ingredients
in food processor and process until it looks like dip. Serve with veggies, pita slices, crackers or
your finger.
