Fresh Peas
Peas are underrated, probably
because they're so often served from a can or frozen box. If you can find fresh, already-shelled peas,
the flavor is much better. I made these
tonight in about 10 minutes, and that's counting the time it took to get the
wrapper off the pea tray. I used mushrooms
and onions with it, but you could toss in whatever vegetables you wanted. Carrots would be good or diced red
pepper. Choose something colorful. Nobody wants to look at a boring plate, so it
would be pointless to add another green veggie unless you're trying to display
your colorblindness.
Fresh Peas and Mushrooms Recipe
- 1/2 pound fresh peas, shelled
- 1/2 onion, chopped (could be
red – see colorblind note above) - 4 baby Portobello mushrooms,
sliced - Olive oil
- Salt & pepper
- 1 teaspoon tarragon
Sauté onions and mushrooms in
olive oil until onions have softened. Add peas and seasonings. Cook
until everything is heated through, about 5 more minutes.
