Crispy Creamy Potato Dish

When you want a potato dish
that's a step above plain, but still easy to prepare, my crispy creamy version
is just the recipe to use. Potatoes are
a dinnertime staple, but sometimes they're a little boring. I've never been a fan of mashed potatoes
because I like a little bite to my vegetables. This dish will be cooked in less than an hour because the potatoes are
cut small, but if you let it go the full hour, the slices will be crispy on the
outside. Delicious. 

Crispy Creamy Potato Recipe 

  • 1 tablespoon olive oil
  • 5 medium potatoes, scrubbed
    and sliced thin (about 1/4" pieces)
  • 1 medium onion, sliced
  • Salt & pepper
  • 2 teaspoons paprika
  • 2 tablespoons grated parmesan
    cheese
  • 2 tablespoons milk (I use
    soy)

Preheat oven to 375 degrees. Spread olive oil evenly around bottom and
sides of medium casserole dish. Put
potatoes and onions in pan, sprinkle with salt, pepper and paprika and toss to
coat well. Add cheese and milk and stir
just to combine. Bake until potatoes are
soft, but outside crisp and milk has been absorbed (stirring once) about one
hour.
