Easy Salad Recipe

Dinner never feels like
dinner to me without a salad. In fact, I can make a meal out of salad and be quite content, but even if I'm serving a
regular entrée with veggies, I like to have a salad too. The ingredients vary depending on what I
have, but that's what's great about a salad – you just put whatever you want or
have in it. The dressing is pretty
standard for me. I almost never buy
bottled salad dressing. I think this one
is better  and easier to keep on hand. If you buy pre‑washed salad in a bag, it will be even faster to make, but
be forewarned. Those salad bags don't
stay fresh nearly as long as a regular old head of lettuce. It won't kill you to wash produce now and
then. Enjoy.

Easy Salad Recipe

  • Half a head of lettuce
  • 3-4 spring onions, chopped
  • 1 cucumber, sliced
  • 2" square feta cheese
  • Handful pitted black olives
  • Handful nuts (cashews,
    peanuts, whatever)


Dressing:

  • Salt and pepper to taste
  • About 2 tablespoons olive oil
  • Juice of 1/4 lemon

Toss all the salad ingredients together, making
sure everything is in bite-sized pieces. Sprinkle salt and pepper over the top, then squeeze on lemon juice and
finally olive oil. Make sure everything
on top of the salad has some of the dressing ingredients on it. Toss well. Keep cold until ready to serve.
