Cooking a Turkey Breast

 

As a dark-meat lover, I’ve never bought a turkey breast before. To me, all the good stuff is in the thigh. But I decided to try one today. It’s been busy around here, so I didn’t give this a lot of effort.

How to Cook a Turkey Breast

Preheat oven to 350 degrees. Put turkey breast on a rack in shallow baking
pan. Rub with olive oil or butter. Sprinkle seasonings all over. I used salt, pepper, poultry seasoning, sage
and some kind of chicken spice I had. Use whatever spices you like. Pour 1 cup water or stock in bottom of pan. Roast about 2 hours, depending on the size (mine was 5 pounds), then check temperature. Remove at around 170 degrees and let sit. Temperature will come up a bit more. You can pull it out as soon as 160 degrees
for a really moist bird but I live with a slightly paranoid eater, so I let it go to 170. The last hour or hour and a
half, add quartered potatoes and onions.
Turkey any time of year.
