White Bean Soup Recipe
Finally, a cold snap
here. Sometimes I need an excuse to make
soup and not leave the house. Granted,
these are things I do on a regular basis without any excuse, but it's not the
same as doing it when everyone else is too. Make this soup with hard beans and soak them the night before. I know that's a little bit of effort, but not
terribly much. Have slippers ready.
White Bean Soup Recipe
- 1 bag white beans
- Thyme & rosemary, dried
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 pepper, chopped (green,
red, whatever) - 1 cup white wine
- 1/3 cup apple cider vinegar
- Grated cheese (optional)
Cover beans with 2 inches water and soak in soup
pot overnight. Next morning, add thyme
and oregano and bring to boil. Simmer
one hour. Sauté chopped onion and
pepper, then garlic. Season beans with
salt and pepper, add wine and vinegar, more herbs. Smash about half beans in pot with immersion
blender (or put half beans in blender to smash, then return to pot). Add sautéed veggies. Taste and re-season as necessary. Top with grated cheese.
