Making gravy at the last minute is one of the worst parts of cooking Thanksgiving dinner, in my opinion.  After being on your feet all day, you're supposed to cheerfully entertain guests while wearing something cute and simultaneously stirring, delumping and straining a large pot of boiling gravy.  Ick.  I figured out a better way.  Read my article and recipe on making gravy ahead at this Suite101 contribution.  Enjoy a glass of champagne in the time you would have spent stirring and stressing.  Happy Thanksgiving.
