Salad on a Pizza
This is a guest recipe from a
dear friend whom I personally know to be a good cook. When she sent me her own version of a
too-tired-to-cook recipe, odd as it sounded, I lovingly accepted it. Next time you're too tired, consider this unique
combination of salad that sits atop the pizza (that's right, not next to but
atop – ignore the sexual connotations if you can). You gotta love creative friends who bother to
send you their own version of lazy recipes. Next time you're feeling the love, share your recipes with me. Meanwhile, thanks to Heather & Harry,
whose last name is, thankfully, not Hughes.
At the grocery store buy:
1 large good quality frozen
pizza w/ ultra thin crust
1 bag o’ salad
Follow directions to cook
pizza
Meanwhile whisk together
dressing of red wine vinegar, olive oil, fresh garlic, honey, salt and pepper. Add salad greens and toss
Remove hot pizza from
oven. Cut into wedges and top with cold salad and some nice black olives
if you have them.
Eat fast!
