Easy Asian Peanut Tofu
I had lunch the other day in
my favorite local Thai restaurant. As
always, the food was delicious, the service impeccable, the décor enjoyable,
and the music…horrendous. I keep
thinking I've just picked a bad day and they're playing something weird, but
it's happened too many times now, and I have to come out of my denial. It is some sort of Asian version of musical
torture. On this occasion, it was a
compilation of show tunes. Several songs
were played from Hair. There were others but I can't pain myself to
return to the memory. It's also
extremely loud, and difficult to ignore. I realize we all have different music tastes, but couldn't a restaurant
at least try to be somewhat neutral, or if not that, then go with the theme of
the food? I could see playing show tunes
if I were in a drag queen review, but for beautiful fresh Thai food? I may have to stay home and make my own
version of Asian cuisine. I can think of
two recipes now. This one will please
even the non tofu-eater in your house. Serve it a dose of some beautiful music…maybe even silence.
3 sliced scallions
1" piece of ginger,
sliced
1 tablespoon olive oil
Splash of vermouth (or white
wine)
Squeeze of lemon
1 teaspoon peanut butter
1 teaspoon honey
1/2 teaspoon red pepper
flakes
1/4 cup pineapple juice
1/2 cup chopped pineapple
4" square tofu cubed
Salt
olive oil. Add vermouth, lemon,
pineapple juice. Stir in peanut butter,
honey, red pepper flakes and pineapple. Add tofu and salt. Cover and cook
until flavored are melded, about 5-10 minutes.
