Cheat Meat

Meat is awful when it's dry. If you cook for someone who likes meat well
done, my sympathies to you. In my
experience, well done equals dry unless you're slow braising. So I must say I'm rather proud of myself for coming
up with a well-done meat recipe that is not only tender, but so easy you will
feel like a cheat. Check the pork before
the end of the cooking time so as not to overdo it. I've actually pulled these tender pork chops out of the oven at
175, and somehow they were still amazingly tender. Cheat meat indeed.
Tender Pork Chops
2 tablespoons olive oil
3 boneless center cut pork
chops, about 1 pound
1 tablespoon apple cider
vinegar
Salt & pepper
1 tablespoon cumin
Preheat oven to 375 (that's degrees Fahrenheit,
and if somebody would tell me where the little degree symbol was, I'd use it!) Smear
a bit of olive oil in the bottom of a baking pan just large enough to hold the
chops. Set pork chops in the pan. Spread olive oil and cider vinegar on the top
side. Sprinkle with salt, pepper and
cumin. Flip chops and do the same to the
other side, minus the vinegar. Bake for
about 40 minutes or until 165 degrees in the center. Serve hot, juicy and proud. Makes 2 servings.
