A Berry Good Breakfast

Cranberries
photo: Melodi T.

I have been eating this for
breakfast now for about two weeks. I
keep expecting to get bored with it, but so far, it hasn't happened. How many things in life can you do every day
for two weeks without getting bored? Plus, it's an easy way to be kind of festive. Cranberries = red = festive. If you have a bread machine, this recipe is
simple. Just throw everything in and
push start. If you don't have a machine,
you're on your own. I never claimed to
be a baker.

Cranberry English Muffin
Bread

2 teaspoons yeast
2 cups bread flour
1 teaspoon sugar
1 teaspoon salt
1 cup minus 1 tablespoon milk
1/8 teaspoon baking soda
1 cup fresh cranberries

Put all ingredients in bread
machine according to your manufacturer's directions. (Mine likes liquids first, but yours might
want them last.) If you have a fruit or
nut cycle, add the cranberries then. Otherwise, dump them in all together. Makes one 1-pound loaf.

p.s.: I seldom eat butter, but it's awfully good
on this bread.
