A Fishy Meal
Lots of people seem to have fish issues. There are the fish-allergy people, the fish-hating people, and the
don't-know-how-to-cook-fish people. There's also the people who are intimidated by cleaning and filleting a
fish. That would be the group I fall
into. I know it's easy, I've been shown
how to do it before, but it still intimidates me. So many bones. I get around it by only buying pre-filleted
fish. But sometimes I see a really fresh
looking whole fish and I wish I wasn't so wimpy with the knife. Anyway, that's my issue. If yours is just not having a good recipe,
your excuses are over.
Mediterranean Fish
Olive oil
1 pound fish fillets (any kind you like – 1/2 pound per
person)
Lemon juice
Salt & pepper
Dried oregano
1/2 diced onion or shallot
1 diced tomato
1 bunch chopped flat leaf parsley
1/2 cup chopped pitted black olives
Preheat oven to 400 degrees. Rub olive oil in bottom of baking dish. Place fillets in dish, sprinkle lemon juice
over, top with salt and pepper and dried oregano. Cover tops of fish with remaining
ingredients. Splash olive oil over everything. Bake until fish is cooked through, flaky and
no longer translucent, about 12-15 minutes. Serves 2.
