Butternut Squash

Butternut  A simple recipe for butternut squash by Guest Author Helen Kenney Poore


The change of seasons is as exciting for cooking as it is for our wardrobes.   Butternut squash is my favorite and this recipe (if you can call it that, it's actually more a reminder to enjoy the fresh vegetables of the season) is simple, easy and delicious.


Baked Butternut Squash




  • 1 or more butternut squash



  • 1 tablespoon butter



  • 1 tablespoon dark brown sugar



  • Dill



Preheat oven to 350


Cut butternut squash in half, lengthwise and scoop out seeds. Place cut-side down in a lightly greased pan (or small amount of water) and bake for 45 minutes. Remove, gently flip squash and fill the "cup" side with butter, brown sugar and sprinkle with dill. Return to oven for an additional 10 minutes.
